The Champagne<\/h4>\n

The Sapience Oenotheque 2013 is a real highlight on many levels, and not just because of this exceptionally beautiful bottle. The cuv\u00e9e is a joint project between Benoit Marguet and his equally biodynamic colleagues David Leclapart, Vincent Laval and Benoit Lahaye. Leclapart supplies the Chardonnay (50%), Laval the Pinot Meunier (25%) and Benoit Lahaye the Pinot Noir (25%) for this prestige cuv\u00e9e. Sapience is vinified by Beno\u00eet Marguet and Herv\u00e9 Jestin, the guru of biodynamic champagne. The winegrowers only use the best plots for Sapience. Before the second fermentation in the bottle, the base wine matures for two years in very select wooden barrels. It then spent a good 10 years on the lees before being disgorged in 2019.<\/p>\n

The 2013 Sapience – a champagne that is bursting with energy! Imagine your palate diving into a sea of aromas: citrus, orange, white flowers and a slightly oxidative touch for which Marguet is so famous. A masterpiece of harmony and grandeur!<\/p>\n

      The Marguet Champagne House<\/h4>\n

      Beno\u00eet Marguet is the fifth generation of his family to run the small Marguet champagne house in the southern Montagne de Reims. This puts the winemaker in the great position of being able to work with vines that are 38 years old on average. Beno\u00eet Marguet firmly believes that an honest and straightforward champagne can only be created through organic cultivation. His vineyards are still plowed with horses and all the champagnes are aged in wood.
      \nSince 2006, Marguet has been collaborating with Herv\u00e9 Jestin, the former cellar master of Duval-Leroy. Jestin advises many Champagne houses, and Beno\u00eet Marguet has learned a lot about biodynamic viticulture from him.<\/p>\n

      The Marguet champagnes are fruity and elegant yet powerful. Mostly without dosage and with a spicy and sometimes smoky note.
