The Champagne

A rarity – a champagne made from 100% Pinot Meunier! Furthermore, Cyril Bonnet completely renounces additional sulfur and dosage in this cuvée. Thus left entirely unadulterated and pure, Le Jour is a very consistent expression of its origin, the Premier Cru single vineyard “Le Jour” in Vrigny. The old vines were planted in this plot in 1971, on a clay soil above a deeper layer of limestone.

A very special, full-bodied champagne which, in terms of style, definitely falls into the category of natural wines. Despite its 0% dosage, the Meunier provides the champagne with a fine sweetness of ripe fruit with very subtle acidity. Fruity and tangy, characterized by a full, delicious mineral flavor with a long and salty finish.

Tasting Note

  • In the glass: sparkling straw yellow and an enormously fine, elegant perlage
  • On the nose: white fruit, wet stone and light aromas of citrus fruits
  • The palate: open and inviting, ripe white fruit, spicy tobacco notes and a fine minerality. The finish has a long, pleasant minerality and saltiness.

  • Le Jour is perfect with white meats as well as mild cheeses.

 

The Champagne House Bonnet Ponson

Aromatic, energetic with a special ripeness.

Since 1862, the Bonnet family has been producing its champagne in Chamery. Grégoire Bonnet was the first winemaker in the area. Most of the house’s vines are located on the hills of the three villages of Chamery, Vrigny and Coulommes la Montagne in the western part of the Montagne de Reims, also known as “petite montagne”. The soils, formed in the Tertiary period, are composed of sand, clay and chalky clay. In 1956, André Bonnet met his wife Monique Ponson, herself from a family of winegrowers in Vrigny, also from the Montagne de Reims. Together they began to cultivate a few parcels of Meunier and Pinot Noir in Chamery, Vrigny and Coulommes la Montagne with the Bonnet-Ponson domain. Today, the area has grown to 9 hectares, planted equally with each of the three grape varieties. In 1979, the son Thierry Bonnet joined the champagne house and, over the course of 30 years, continued to drive the development of the domain. Additional wine cellars in the sandy soils of the “Petit Montagne” have since allowed the precious champagnes to age for longer. After studying enology and working as a red winemaker in the southwest of France, Cyril Bonnet joined the family domain in 2013 and at the same time began converting the entire vineyard to organic farming methods.
