The Champagne
May we introduce? The new arrival from Bruno Paillard: 100% Pinot Noir and as elegant as its bottle. The Bruno Paillard Blanc de Noirs Grand Cru embodies the essence of Pinot Noir from the best northern crus of Champagne. This cuvée brings together wines from four prestigious Grand Cru sites: Verzenay, Mailly, Verzy and Bouzy. These historic, chalky soils give the wine its unmistakable minerality and elegance.
The grapes come exclusively from the first pressing. Vinification takes place mainly in stainless steel tanks, with 20% of the wines maturing in barriques to add complexity. After three years in the bottle, the champagne is disgorged and rests for a further six months in the BP cellar. The dosage is only 3 g per litre.
Tasting Note
- In the glass, the champagne has a bright golden hue with copper-coloured reflections and a fine, lively perlage.
- The nose reveals a complex bouquet of red fruits such as cherry, as well as slightly citrusy and peppery notes.
- On the palate, it immediately impresses with its distinctive minerality and a salty accent, supported by cherries and spicy notes. Fine perlage, full-bodied and with a long, complex finish.

- Solo or as an accompaniment to food.

- It can also be served with fish, poultry, savoury and slightly smoky dishes.
The Champagne House Bruno Paillard
Purity, minerality, elegance and complexity
The champagne house was founded in 1981 by its namesake Bruno Paillard and is one of the youngest champagne houses. The founder comes from a family of grape brokers and winegrowers who have lived and worked in the heart of Champagne for more than three centuries. His idea and philosophy is to extract the quintessence from the best crus to create a composition, a great champagne. His champagnes are mainly found in upscale restaurants and specialist wine shops.
