The Champagne
The Billecart-Salmon Brut Sous Bois (literally “under wood”) is an exceptional champagne that impresses with its complex aromas and ageing in oak barrels. It is made from equal parts of the three traditional Champagne grape varieties chardonnay, pinot noir and pinot meunier, which gives it a balanced structure and depth. With aromas of brioche, toffee, dried fruit and fresh citrus, as well as a creamy texture, it delights us! What about you?
Tasting Note
- The Brut Sous Bois shines in the glass in a crystalline yellow with golden highlights. Fine, slowly rising bubbles and a long-lasting foam.
- The nose reveals a rich bouquet of roasted hazelnuts, fresh citrus fruits and white peaches, complemented by subtle buttery notes.
- On the palate, it impresses with a creamy texture and a harmonious combination of ripe fruit and delicate brioche notes. The fine mineral structure and lingering finish make this champagne a real pleasure to drink.

The Billecart-Salmon Champagne House
One of the few top houses that has been family-owned since its founding in 1818. The small champagne house Billecart-Salmon is one of the oldest family dynasties in the Champagne region. Since the early 1990s, the house has been managed by the 7th generation, Francois Roland Billecart. Billecart-Salmon is considered to be synonymous with refined champagnes with a clear mineral character. They surprise the senses with a fairy-tale delicacy and a pronounced straightforwardness.
