The Champagne
This champagne, like most of Bruno Paillard’s champagnes, is extra brut. The grapes for this excellent Blanc de Blancs come exclusively from Grand Cru villages, mainly from Le Mesnil sur Oger and Oger, where Bruno Pailliard manages its own vineyards. The wine rests on its lees for at least 4 years, so the acidity of the Chardonnay softens and the Champagne becomes creamier overall. Bruno Paillard relies on a very slow fermentation in the bottle, this provides this incredible delicate perlage.
To protect the champagne from light, it is delivered in a biodegradable UV protective film made of cellulose.
Tasting Note
- In the glass: Very delicate golden yellow with green and silver reflections. Extremely fine, lively perlage.
- In the nose: mainly citrus aromas such as lemon and grapefruit. The chalky, mineral note is also immediately present. With a little air, one can also perceive almond and fine brioche notes.
- Palate: the attack is lively and shows a complex combination of citrus, white flowers and mineral notes. The perlage is super fine, silky and creamy. The finish is long and fresh.

- Enjoy solo or as a food accompaniment.
- This champagne is excellent with seafood, especially oysters.
- It can also be served with fish or as an accompaniment to an entire menu, as long as it is not particularly spicy or sweet dishes.
The Champagne House Bruno Paillard
Purity, minerality, elegance and complexity
The champagne house was founded in 1981 by its namesake Bruno Paillard and is one of the youngest champagne houses. The founder comes from a family of grape brokers and winegrowers who have lived and worked in the heart of Champagne for more than three centuries. His idea and philosophy is to extract the quintessence from the best crus to create a composition, a great champagne. His champagnes are mainly found in upscale restaurants and specialist wine shops.
