The Champagne
A wonderful rosé champagne made from 67% Chardonnay and 33% Pinot Noir, completed by 60 months of bottle fermentation using a natural cork and agraffe, similar to the Dom Pérignon method. This complex technique (tirage sous liège) promotes fine micro-oxidation, which gives the champagne its creamy texture and complex aromas.
Tasting Note
- In the glass, the Neuville Rosé presents itself with a vibrant raspberry pink and orange-pink hues, interspersed with a fine, persistent mousseux.
- The nose initially reveals beguiling aromas of raspberry and strawberry. With aeration, more complex aromas of blackcurrant and licorice are added.
- On the palate, it impresses with its full body, freshness and minerality as well as a pleasantly creamy mousse.
Pair with
The ideal accompaniment to salmon or beef. Also works excellently with pasta dishes or as an aperitif.
The Champagne House Le Brun de Neuville
The Le Brun de Neuville wine estate developed from a group of winegrowing families who shared a common desire to showcase the Côte de Sézanne and its excellent Chardonnays. The champagne house, founded in 1963, stands for tradition and excellence in the picturesque countryside near Béthon, not far from the town of Sézanne. Le Brun de Neuville claims to be a pioneer and encourages them to adopt sustainable winegrowing practices. The result: grapes from organically cultivated vineyards that are grown without herbicides, plowed and certified as “Haute Valeur Environnementale” (HVE) or “Viticulture Durable en Champagne” (VDC). Le Brun de Neuville concentrates on the cultivation of Chardonnay and Pinot Noir.
