The Champagne
This vintage champagne from Bruno Paillard is made exclusively from the first pressing of grapes from a total of 8 great terroirs of Pinot Noir (60%) and Chardonnay (40%). 20% of the wines were vinified in small, old oak barrels. An eight-year maturation process in the bottle, including a minimum rest period of 12 months after dégorgement, is what makes this champagne so concentrated and complex. The vintage champagne is rounded off by a persistent freshness and a subtle saltiness.
2012 experienced climatic ups and downs and the winegrowers also often had to worry: A gentle start to winter, followed by extreme cold, then heat and rain that challenged the vines. Despite hail and fluctuating conditions, the sunny August produced perfectly ripe grapes. Despite the vagaries of the weather, the Pinot Noir and Chardonnay harvests were of outstanding quality.

With the aim of composing excellent champagnes from the best crus, Paillard has shaped a style of champagne known for its delicate effervescence and creamy, mineral texture. His champagnes are mainly found in high-end restaurants and in the specialized wine trade.
