The Champagne
The grapes for the Billecart-Salmon Blanc de Blancs Grand Cru come from four Grand Cru vineyards on the Côte des Blancs: Avize, Chouilly, Cramant and Mesnil. These first-class sites in Champagne guarantee the high quality of this champagne made exclusively from Chardonnay.
This Blanc de Blancs created by Billecart-Salmon cellar master François Domi has an impressively long-lasting, fine perlage and fruity aroma, combined with the freshness typical of Blanc de Blancs. In addition, 4-5 years of ageing on the lees give the champagne a beautiful creaminess and great complexity. No surprise it was awarded 92 out of a possible 100 points by the Wine Spectator at an expert tasting in November 2013.
Tasting Note
- In the glass, the Blanc de Blancs shimmers in a golden hue with delicate green reflections. Fine, slowly rising bubbles and long-lasting foam.
- The nose reveals aromas of fresh almonds, hazelnuts and white fruits, which combine a pleasant freshness and maturity.
On the palate, it impresses with a creamy perlage, fine brioche notes and a mineral structure.

Billecart-Salmon’s Blanc de Blancs is an excellent accompaniment to seafood, oysters and delicate fish dishes and is perfect for opening a festive event.
The Champagne House Billecart-Salmon
One of the few top houses that has been family-owned since its founding in 1818. The small champagne house Billecart-Salmon is one of the oldest family dynasties in the Champagne region. Since the early 1990s, the house has been managed by the 7th generation, Francois Roland Billecart. Billecart-Salmon is considered to be synonymous with refined champagnes with a clear mineral character. They surprise the senses with a fairy-tale delicacy and a pronounced straightforwardness.
